Are you someone who enjoys wholesome home cooked meals but would rather not spend hours in the kitchen? I am!
Maybe it’s the age of my kids, or the fact that I have so many other interests that I’d rather not spend the few minutes of leisure time I have in the kitchen.
Or it may be that when I’m cooking I always have at least two children needing my attention constantly.

This is when recipes like this Spinach Tortellini Bake come in handy. I found whole wheat cheese tortellini – which is sometimes hard to find and added cheese and baked it. Simple as that.
Dietitian’s Dish
Ever notice a trend of my addition of spinach to many recipes? Well, it’s true, I try to sneak it in whenever I can. No, I’m not trying to literally “hide” vegetables from my kids, but I do love adding veggies whenever possible.
Spinach is a nutrition powerhouse that’s full of nutrients like vitamin A and K, folate, iron and fiber.
It’s fairly easy to add to practically any meal, especially pasta dishes like this tortellini bake.
Other Ways to Incorporate Spinach Into Your Diet in Addition to This Spinach Tortellini Recipe
- Sauté spinach in a skillet then add eggs to increase your veggies at breakfast time.
- Add a few handfuls of spinach to any lettuce salad you make.
- Include spinach in sandwiches like this one Havarti Turkey and Spinach Panini.
- Enjoy spinach in just about any homemade soup or stew.
Easy Spinach Tortellini Bake
Ingredients
- 1 9 ounce package whole wheat three cheese tortellini
- 2 cups fresh spinach leaves
- 1 1/2 cup pasta sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup Parmesan cheese
- 1/4 cup fresh parsley chopped
Instructions
- Preheat oven to 350°F. Coat a 1 1/2 quart baking dish with non-stick cooking spray.
- Cook tortellini according to directions.
- Place spinach leaves in a colander. Once tortellini is cooked, pour tortellini over top of spinach leaves in colander.
- In baking dish, combine tortellini/spinach mixture with pasta sauce.
- Top with mozzarella and Parmesan cheese.
- Bake for 8-10 minutes or until cheese is melted.
- Top with fresh parsley if desired.
